- For the tomato sauce
- 800 grams Tomatoes
- 1 stalk Celery
- 1 garlic clove
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- 1 Tbsp freshly chopped parsley
- 1 pinch sugar
- salt
- cayenne pepper
- For the kale cakes
- 1 kilogram Kale
- salt
- 1 onion
- 100 grams Bacon
- 1 Tbsp vegetable oil
- 4 eggs
- 50 grams grated Parmesan
- breadcrumbs
- salt
- peppers (freshly ground)
- Nutmeg
- clarified butter (for frying)
Preparation steps
1.
For the tomato sauce, scald in hot, boiling water, then peel, quarter, core and dice. Wash, clean and dice the celery. Peel garlic and chop finely. Sauté together with celery in hot oil. Stir in the tomato paste, sauté briefly and simmer about 5 minutes, then add the parsley and season with sugar, salt and cayenne pepper.
