- 8 ozs Beets (1 beet tuber)
- 1 garlic clove
- 10 ozs Greek yogurt
- 1 organic lemon (peel and juice)

- 3 Tbsps fresh oregano leaves
- 14 ozs White bean (can; drained weight)
- 2 Tbsps olive oil
- 2 ozs whole grain breadcrumbs (4 TBSP.)
- 2 Tbsps milk (whole)
- 22 ozs Ground lamb
- 1 tsp Chinese 5 spice powder
- 3 ½ ozs Feta
- 6 ozs romaine lettuce leaves

Preparation steps
For the cream, peel beet and grate into a bowl. Peel and finely dice the garlic clove. Put garlic with yogurt and 1 tsp lemon zest in a bowl, mix and season with salt and pepper.
For the skewers, wash oregano and shake dry. Mix beans, lemon juice, 2 tablespoons oregano and 1 tablespoon olive oil in a bowl, season with salt and pepper.
Put breadcrumbs and milk in a bowl. Add minced lamb, spice mixture, salt and pepper. Add feta and knead well with your hands. Form ground meat mixture into 8 rolls. Heat 1 tablespoon oil in a large non-stick frying pan. Fry rolls, turning, over medium heat for about 10 minutes. Then place on wooden skewers.
Wash lettuce leaves, shake dry and lay out on a platter. Arrange the beans on top, arrange the skewers on top and sprinkle everything with lemon zest and oregano leaves. Pour the beet cream into a bowl, garnish with the remaining oregano leaves and serve with the skewers.
