700 grams Lamb shoulder (boneless)
2 onions
3 garlic cloves
400 grams dried Apricot
3 Tbsps olive oil
400 milliliters Vegetable broth
1 tsp Turmeric
salt

2 generous pinches Saffron

Preparation steps

Rinse lamb shoulder, pat dry with paper towels, trim and cut into 2 cm (approximately 1 inch) cubes.

Soak raisins in water.

Peel and finely chop onions and garlic. Chop 100 grams (approximately 3.5 ounces) of dried apricots.

Heat oil in a pan, cook lamb, onions and garlic, stirring, until meat is browned. Pour vegetable stock, season with turmeric, salt and pepper. Add chopped apricots and simmer, covered, for 40 minutes. Remove the lid, add all dried fruit and simmer for 15-20 minutes more on medium heat. Season with saffron, cinnamon, salt and pepper. Simmer for about 5 minutes on low heat.

Season lamb with salt and pepper to taste, serve with couscous.
