Lamb's Lettuce with Radishes, Avocado, Grapefruit and Fennel

Avocado and walnuts contain a lot of fat, but mainly heart-healthy unsaturated fatty acids.
You can let your imagination run wild in the composition of this salad: instead of butter lettuce, arugula is also delicious, and you can replace the walnuts with almonds, hazelnuts or sunflower seeds. If grapefruit is too tart, you can use an orange instead.

- 12 Radish
- 1 Grapefruit
- 1 Fennel bulb
- 1 tsp Mustard
- 1 tsp light soy sauce
- 2 pinches ground Turmeric
- 3 Tbsps lemon juice
- 6 Tbsps olive oil
- salt
- freshly ground peppers
- 1 Avocado
- 3 ½ Tbsps Walnut
Preparation steps
Rinse and trim the mache and radishes. Cut the radishes into slices. Peel the grapefruit and cut out the fillets. Rinse, trim and cut the fennel into strips.
Mix the mustard, soy sauce, turmeric, lemon juice and olive oil and season with salt and pepper. Halve the avocado, remove the pit and cut into thin slices.
Mix the mache, radishes, grapefruit, fennel, avocado and walnuts mix and serve drizzled with the dressing.
