200 milliliters Whipped cream
300 grams Yogurt (0.1% fat)
200 grams Quark
125 grams sugar
Lavender oil
1 Tbsp lemon juice

Preparation steps

1.

Rinse the lavender, shake dry, and pluck the flowers. Combine the lavender and cream in a sauce pot and bring to a simmer. Remove from the heat, let cool and refrigerate overnight.

Combine the yogurt, quark, sugar, and lemon juice. Whip the cream until stiff and fold into the yogurt mixture. Add lavender oil to taste. Transfer the cream mixture to a shallow dish and freeze for 3 to 4 hours, stirring every half hour.

Serve scoops of ice cream in bowls drizzled with lavender honey and sprinkled with lavender flowers if desired.
