Ingredients

For the pastry
200 grams Pastry flour
40 grams grated Parmesan
1 egg
80 grams butter
1 pinch salt
softened butter (for the pan)
For the topping
400 grams Crabmeat
2 stalks Leeks
1 Tbsp butter
2 Tbsps breadcrumbs
100 grams grated Mountain cheese
4 eggs
100 grams Crème fraiche
Chili thread
200 milliliters Whipped cream
salt
peppers

Preparation steps

For the pastry: mix flour with Parmesan, egg and butter cut into pieces, knead to a smooth dough. If necessary, add a little cold water or flour. Wrap in plastic wrap and refrigerate for 30 minutes.

For the topping: separate crabmeat with a fork. Rinse thyme, shake dry and pluck off leaves. Halve leeks lengthwise, rinse and cut into strips.Heat butter in a pan and saute leeks for about 2-3 minutes or until translucent. Remove from heat and cool slightly.

Butter tart pan.

Roll out pastry and line tart pan with it, making an edge all around. Prick pastry with a fork several times and sprinkle with breadcrumbs. Spread crabmeat and leeks on top.

Mix cheese with eggs, cream, thyme, chile threads and cream. Season well with salt and pepper and pour over crabmeat and leeks. Bake in preheated oven at 180°C (approximately 350°F) for about 50 minutes or until golden brown.

6.

Remove from oven and serve warm or cooled.
