Lemon Star Cake
Ingredients
- For the cake
- 150 grams Pastry flour
- 1 ½ tsps Baking powder
- ¼ tsp salt
- 4 eggs
- 80 grams sugar
- 7 Tbsps sunflower oil
- Lemon peel (1 teaspoon zest)
- Orange peel (1 teaspoon zest)
- 4 Tbsps Orange juice
- 2 Tbsps lemon juice
- For the filling
- 5 egg yolks
- 1 egg
- 100 grams sugar
- 120 milliliters lemon juice
- 50 grams butter
- 3 tsps grated Lemon peel
- To decorate
- 200 grams Whipped cream
- Cake candle
Preparation steps
For the cake: Preheat the oven to 170°C (approximately 350°F). Grease the sides of a pan with butter. Line the bottom of the pan with parchment paper. Mix the flour, baking powder, and salt together. Separate the eggs. Mix the egg yolks with 60 grams (approximately 1/2 cup) until light and creamy. Pour the oil in a thin stream while mixing until combined. Add citrus zest, the flour mixture, and citrus juices alternately to the eggs.
Beat the egg whites with the remaining sugar, about 20 grams (approximately 1/6 cup) and a pinch of salt until stiff. Fold the egg whites into the yolk mixture. transfer the batter into the pan and bake for about 40 minutes until golden brown. Let cool, remove from the pan, and let cool completely on the rack.
For the filling: Mix the egg yolk, egg, sugar, and lemon juice in a pot for about 8 minutes. Boil on low heat until smooth and thick while stirring continuously. The curd is ready when it thinly coats the back of a spoon. Remove from the heat. Stir in the butter and lemon peel. Chill.
Cut the cake in half horizontally and fill it with the cream.
To decorate: Whip the cream until stiff. Fill a pastry bag and decorate the star shaped cake with decorative lines.
For a celebration, insert candles.
