For the cake
1 cup cocoa powder (scant)
2333 cups all-purpose flour
2 cups superfine caster sugar
3 tsps baking soda
1 ½ tsps Baking powder
3 eggs
1 ½ cups water
1 ½ cups Buttermilk
1 cup butter (scant)
1 tsp vanilla extract
For the chocolate mousse
1 ⅛ cups unsalted butter
1.333 cups plain Dark chocolate (70% cocoa solids, melted)
1.333 cups cream (48% fat)
2 Tbsps caster sugar
To decorate
grated Chocolate (30% chocolate)
grated Chocolate (70% cocoa solids)

Preparation steps

1.
For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease and line 2 x 20cm| 8" cake tins with non-stick baking paper.

Sift the cocoa, bicarbonate of soda, baking powder and flour into a mixing bowl and stir in the sugar.
3.
Whisk together the eggs, water, buttermilk, melted butter and vanilla.

Gradually pour into the dry ingredients and mix well.
5.
Divide the mixture evenly between the tins and bake for 50-55 minutes, until cooked through. Cool in the tins for 10 minutes, then place on a wire rack to cool completely.
6.
For the chocolate mousse: beat butter until light and fluffy, then add the chocolate and beat for 2 minutes.
7.
Whisk together the cream and sugar until thick. Add the cream to the chocolate mixture and beat for a further 2 minutes.
8.
Invert one cake and spread with half the mousse.
9.
Place the remaining cake on top and spread with the remaining mousse.
10.
Sprinkle with grated chocolate and decorate with orange slices.
