4 egg yolks
¼ cup sugar
½ tsp vanilla extract
1 cup milk
1 cup cream (48% fat)
¼ cup honey
2 unwaxed lemons (finely grated zest)

Preparation steps

1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Butter 4-6 ramekins.

Whisk together the egg yolks, sugar and vanilla until blended.

Heat the milk, cream, honey and lemon zest in a pan over a low heat until the honey melts, then whisk well.

Whisk a few tablespoons of the mixture into the egg mixture, then slowly pour in the rest, whisking constantly.
5.
Divide the mixture evenly between the ramekins. Place in a roasting tin and carefully pour in hot (not boiling) water until it reaches halfway up the sides of the ramekins.
6.
Bake for 30-40 minutes until set in the middle. Cool, then chill completely before serving decorated with bay leaves.
