For the dough
200 grams Pastry flour
1 pinch salt
2 Tbsps powdered sugar
1 egg yolk
120 grams cold butter
For the filling
2 eggs
2 egg yolks
1 can sweetened condensed milk
4 Limes (finely grated peel)
125 milliliters Lime juice
1 Star fruit
1 Tbsp chopped Pistachio
powdered sugar (for dusting)

Preparation steps

For the dough, cut cold butter into small pieces. Mix flour, salt, powdered sugar, egg yolk, butter pieces and 2 tablespoons ice water and quickly knead to a smooth dough. Wrap in plastic wrap and refrigerate for about 30 minutes. Preheat oven to 200°C (gas mark 3) (approximately 400°F). On a floured surface, roll out dough. Carefully press dough into tart pan, about 26 cm (approximately 10 inches) diameter. Pierce flat part of dough several times with a fork. Pre-bake in preheated oven, about 15-20 minutes. For the filling, mix eggs, egg yolks and condensed milk until creamy. Stir in lime zest and juice. Pour filling into tart shell and bake for 30-40 minutes. Remove from oven and let cool. Just before serving, cut star fruit into slices. Garnish tart with starfruit slices, sprinkle with pistachios and dust with powdered sugar.
