18 ozs Cottage cheese
5 ¼ ozs Oat bran
7 ¼ ozs Almond flour
1 ¾ ozs ground flaxseed (5 TBSP.)
1 tsp salt
4 eggs (M)
1 tsp ground Turmeric
2 tsps Baking powder
1 Tbsp Sesame seeds
1 Tbsp Pumpkin seed

Preparation steps

Drain the cottage cheese well. Mix oat bran with almond flour, 4 tablespoons flaxseed, and salt. Mix cottage cheese in a mixing bowl with eggs and turmeric until smooth. Add bran mixture and mix everything well. Let rest for about 15 minutes, then mix in the baking powder.

Line a baking tray with baking paper. Divide the bran-cottage cheese mixture into 4 portions and place them on the baking sheet with enough space between them. Form 4 elongated loaves from the portions and make 4 diagonal cuts in each.

Mix remaining flax seeds with sesame and pumpkin seeds and sprinkle over the breads. Bake low-carb bread in a preheated oven at 200 °C / 400 ˚F (convection oven 180 °C / 375 ˚F) for approx. 25 minutes. Remove and let cool on a cooling rack.
