200 grams potatoes
200 grams lamb's lettuce
1 cup hot Broth
1 tsp Mustard
salt
freshly ground peppers

2 Tbsps Vinegar
4 Tbsps vegetable oil
1 shallot
1 small Apple
100 grams cooked ham
2 Tbsps scallions

Preparation steps

1.

Peel, rinse and coarsely chop potatoes. Cook potatoes in salted boiling water, about 25 minutes. Drain. While still hot, press potatoes through a potato ricer.

Rinse and spin mache dry.

3.

To make potato dressing: Mix potatoes with hot broth until creamy. Season generously with mustard, salt, pepper, 1/2 teaspoon sugar, vinegar and oil.

4.

Peel shallot and apple and finely grate. Stir into potato dressing.

5.

Cut the ham into thin strips.

6.

Divide mache among bowls, drizzle with potato dressing and sprinkle with ham and chives.
