Ingredients

For the dough
400 grams Pastry flour
2 egg yolks
200 grams soft butter
5 Tbsps Whipped cream (at least 30% fat content)
1 pinch salt
100 grams sugar
4 Tbsps cocoa powder
1 packet Baking powder
For topping
6 eggs
750 grams Quark
100 grams Sour cream
150 grams Yogurt (low-fat)
1 lemon (organic, peel)
2 packets vanilla pudding mix
75 grams sugar (to taste)
For garnish
1 egg yolk
3 Tbsps Whipped cream (at least 30% fat content)
powdered sugar (for dusting)

Preparation steps

For the dough: Put all ingredients for the dough into a bowl and knead together either by hand or using dough hook of a hand mixer. Divide dough, wrap in plastic wrap and refrigerate for at least 30 minutes. Preheat oven to 200°C (approximately 390°F).

For the topping: Separate eggs. Stir yolks with quark, sour cream, yogurt, lemon peel and pudding powder until smooth. Whip egg whites with sugar until stiff peaks form and fold into the quark mixture.

Roll out dough into size of baking sheet and place into a parchment-lined baking sheet. Spread topping onto dough. Crumble remaining dough into small pieces and spread on the topping. Bake in preheated oven for 30-40 minutes. Mix egg yolk with cream mix and add to top of cake. Continue baking another 15 minutes.

Remove from oven and let cool. Sprinkle with a little powdered sugar to taste, cut into pieces and serve.
