1 cup Vegetable Margarine
1 cup sugar
1 tsp vanilla extract
1 pinch salt
½ tsp grated Lemon peel (from an unsprayed lemon)
4 eggs
½ cup milk
3 ½ cups flour

½ cup cocoa powder
1 ½ cups Pecan (shelled and halved)

Preparation steps

Cream the margarine and sugar. Stir in the salt, grated lemon peel and vanilla extract. Whisk the eggs and gradually whisk into the creamed margarine and sugar to produce a light, fluffy mixture.

Sieve the flour, cornflour and baking powder into a bowl and mix well.

Sieve the dry ingredients onto the creamed mixture and stir in with about half of the milk to produce a homogenous mixture.

Put the cocoa into a separate bowl (sieve it for the best results).

Mix half of the cake mixture with the cocoa and stir in the rest of the milk.

Grease a loaf tin and sprinkle with breadcrumbs. Put the two mixtures into two separate piping bags and pipe the mixtures into the prepared tin in stripes. Place pecan halves on the dark stripes.

Draw a long fork through the mixture in a spiral movement so that the cake will have a spiral pattern inside. Bake in a preheated oven (180 ° with top and bottom heat, middle shelf) for about 1 hour.
