Preparation steps

1.

Rinse the salmon fillets, pat dry and cut crosswise into 8 equal pieces. Mix soy sauce, sake and lime juice in a bowl. Place the pieces of fish in the marinade and chill for 1 hour in the refrigerator.

Cook the fillets on a charcoal grill or under the broiler in a preheated oven for 2-3 minutes on each side, brush again on both sides with the marinade before turning. Serve immediately and use the remaining marinade as a dip.
