- 1 stem Lemongrass
- 1 hazelnut-sized ginger
- 2 Juiced Limes
- 22 ozs Monkfish
- salt
- freshly ground pepper
- 4 Tbsps olive oil
- vegetable oil (for cooking)
- 2 ozs Prawn cracker (krupuk)
- to taste Arugula (for garnishing)
Preparation steps

Peel lemongrass and chop finely. Peel and finely grate ginger. Combine lime juice, ginger and lemongrass. Cut fish fillets into 12 equal pieces, rinse, pat dry and marinate for about 30 minutes in lime marinade, turning fish over after 15 minutes. Remove fish from the marinade, pat dry and season with salt and pepper. Heat oil in a pan and cook monkfish for about 4 minutes per side. Remove fish from the pan and saute Shrimp crackers (krupuk) in the same pan until golden, drain on paper towels. Arrange monkfish with prawn crackers on plates and serve garnished with arugula.
