1 kilogram potatoes (predominantly waxy)
salt
freshly ground peppers
1 bunch parsley
1 bunch Basil
1 bunch Chives
100 milliliters milk
3 Tbsps butter
Nutmeg
100 grams Frozen pea
4 eggs
50 grams smoked ham (sliced)

Preparation steps

1.

Peel and chop the potatoes and cook for about 25 minutes in salted water.

2.

Rinse the herbs and shake dry. Pluck the leaves from the stems and chop finely with a mezzaluna. Cut the chives into rolls.

3.

Drain the potatoes and mash with a potato masher. Add the milk, butter and the herbs. Season with salt, pepper and nutmeg.

4.

Grease a baking dish and spoon the mashed potatoes into 4 piles. Make a well in the center of each pile with a spoon.

5.

Add the peas to the wells and slide an egg on top of each.

6.

Season with salt and pepper.

Cut the ham into small pieces and add to the dish.

Bake in a preheated oven at 200ºC (approximately 400ºF) for 15-20 minutes.

Serve immediately.
