2 garlic cloves
1 generous pinch ground Caraway
1 tsp sweet ground paprika
1 tsp White vinegar
125 milliliters olive oil

Preparation steps

1.

Peel and rinse the potatoes. Cut into large pices, and cook for 20 minutes in boiling salted water. 

2.

Rinse and trim the peppers. Cut in half, remove the seeds, and cut into wide strips. Place under the broiler, skin side up, and broil until the skin begins to blister. Remove from the oven and let cool. Remove the skin and finely dice. Set aside 3 tablespoons of diced peppers. 

3.

Puree the remaining peppers with the spices, pressed garlic, 1 teaspoon of salt, the vinegar, and the olive oil. 

4.

Drain the potatoes and dry slightly. Mash thoroughly, or pas through a ricer and mix with the pepper puree. Garnish with the remaining peppers and serve.
