Preparation steps

1.

For the pattie mixture: Peel and finely chop the onion and 1 clove of garlic. Thinly slice the remaining 2 cloves of garlic. Heat 1 tablespoon of butter in a skillet and sauté the finely chopped onion and garlic until soft. Reserve the garlic slices for later on. Remove from the heat. Soak the breadcrumbs in warm water. Crumble the ground meat into the onion mixture and add the egg until. Mix until well combined. If the mixture is too wet to handle, add the soaked breadcrumbs. In a pot of boiling water, blanch the tomatoes. Peel, core, quarter and finely dice the tomatoes. Stir the tomatoes, feta, mint, lemon zest, salt, pepper and paprika together.

2.

For the assembly: Divide the meat mixture into 12 patties. Heat oil with the remaining butter in a frying pan on the stove. Cook each pattie until golden and cooked through, about 3-4 minutes. In the last 1-2 minutes of the cook time, stir in the garlic slices and diced tomato mixture to warm through. Serve garnished with mint leaves.
