Preparation steps

1.

Rinse oranges with hot water and finely grate zest. With a sharp knife, cut off peel and bitter white pith from oranges. Cut between membranes to remove whole segments. Dice segments.

2.

Rinse and halve chile lengthwise, remove seeds and ribs and slice into thin strips. Peel and finely chop garlic. Rinse, trim and cut scallions crosswise into thin rings. Cut toast into cubes.

In a bowl, combine ground pork with orange zest, scallions, half of the garlic and chile, toasted bread cubes, 4 tablespoons soy sauce and egg yolks. Season with salt, pepper and cinnamon and knead to combine. With moistened hands, form mixture into small, ping-pong sized balls.

4.

Fry remaining garlic and chile in 1 tablespoon hot oil until translucent. Add oranges, tomatoes, honey, instant coffee and remaining soy sauce. Season with salt and pepper and simmer about 20 minutes.

5.

Fry meatballs in remaining oil on all sides. Serve meatballs with sauce.
