Preparation steps

1.

Soak roll in water, then squeeze to remove liquid. Peel and dice onion and garlic. Remove seeds and ribs from bell pepper and finely dice. Sauté onion, garlic and pepper briefly in a pan. Finely chop parsley and rosemary. Combine roll, ground meat, sauteed vegetables, herbs, mustard and egg in a bowl. Season with salt and pepper and mix well.

2.

Cut the potatoes into large cubes. Peel and finely chop onion. In a pan, cook potatoes and onion in a little oil. Add broth, vinegar, and remaining oil. Season with salt, pepper and sugar. Rinse endive and cut into strips. Cut radishes into small pieces.

3.

With wet hands, form meat mixture into meatballs. Fry meatballs in plenty of oil until browned on all sides, 5-7 minutes. Stir endive and radish into potatoes and serve with the meatballs.
