80 grams Pancetta (sliced)

1 Tbsp butter
2 Tbsps finely chopped parsley
800 grams mixed Ground meat
2 eggs
60 grams breadcrumbs
30 grams green Olives (pitted)
salt
freshly ground peppers
1 tsp thyme
1 Tbsp medium hot Mustard
vegetable oil (for the pan and for brushing)

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Soak the bread in lukewarm water. Peel and finely grate the carrot. Cut two slices of the pancetta into pieces about 3 cm long (approximately 1 inch). Finely chop the rest. Peel and finely chop the onions and garlic. Fry the onions and garlic in butter with the chopped bacon. Fold in the grated carrots, remove from heat and let cool slightly. Mix in the soaked bread, the ground meat, parsley, eggs and breadcrumbs. Chop the olives and add them. Season with salt, pepper, thyme and mustard. Knead the dough into a homogeneous mass and season to taste. Put into a greased loaf pan. Divide the cut bacon on top, drizzle with a little oil and cook in the oven for 1-1 1/2 hours.
