4 young Artichoke
4 Tomatoes
80 grams black Olives (pitted)
6 Tbsps olive oil
2 tsps thyme (finely chopped)
juice of lemons
1 garlic clove
salt
freshly ground peppers

Preparation steps

1.

Cook noodles in plenty of boiling salted water until al dente, drain and rinse with cold water.

2.

From the artichokes, remove the woody leaves. Cut off the tips of the remaining leaves with scissors and immediately put in water with lemon juice.

3.

Carve tomatoes crosswise, blanch, peel, quarter and remove seeds.

4.

Sauté artichokes in hot olive oil on all sides. Add olives and tomatoes. Press garlic, stir in with thyme and sauté.

5.

Add the tagliatelle to pan, heat through and season with salt and pepper. Serve.
