4 sheets white gelatin
2 Limes
½ Vanilla bean
550 milliliters
50 grams sugar

Lime leaves (for garnishing)

Preparation steps

1.

Soak gelatine in cold water.

2.

Rinse lime in hot water and pat dry. Cut 1 lime into thin slices, squeeze juice from second one.

3.

Slit vanilla pod lengthwise and combine with milk, lime juice and sugar in a pot. Bring to boil.

4.

Remove lime milk from heat and take out vanilla pod. Squeeze gelatine well and dissolve in hot milk mixture.

5.

Pour cream into 4 bowls and refrigerate for about 4 hours.

6.

Garnish with lime slices and, if desired, with candied lemon zest and lime leaves. Serve.
