¾ cup Polenta
¾ cup flour
¾ Tbsp sugar
¾ tsp Baking powder
¼ tsp baking soda
salt
1 ¾ cups Soy milk
2 Tbsps vegetable oil
1 cup Cantaloupe (cut using a melon baller)
1 cup Kiwi (cut into chunks)
4 Tbsps Maple syrup

Preparation steps

1.
Mix together the polenta, flour, sugar, baking soda, baking powder and salt.

In a large bowl, whisk together the milk and oil. Gently add the wet ingredients to the dry ingredients, mixing until well combined without any big lumps.
3.
Preheat a nonstick griddle over medium heat. Spray with cooking spray. Add the pancake batter, to your desired size, and cook until the bubbles begin to burst. Flip over to finish cooking.
4.
Serve warm with with fruit on the side. Drizzle maple syrup, if desired.
