6 Tomatoes
2 red onions

2 Tbsps olive oil
1 Tbsp Tomato paste
1 tsp dried oregano

2 Tomatoes
1 Lettuce
16 shrimp (peeled and deveined)
2 Tbsps olive oil
salt
freshly ground peppers
1 tsp lemon juice
8 mini hamburger buns

Preparation steps

For the sauce, blanch the tomatoes, rinse with cold water, peel, quarter, core and dice. Peel the onions, halve and slice. Rinse the chile pepper, cut in half, wipe dry and dice. Saute the onions and chilein hot oil for 1-2 minutes. Stir in the tomato paste and add the tomatoes and oregano. Let simmer for about 10 minutes until slightly thickened. Season with salt and sugar.

For the burgers, rinse the tomatoes and slice. Rinse the lettuce, shake dry and tear into pieces. Rinse the shrimp, pat dry and saute in hot oil in a pan until pink, about 4 minutes. Season with salt, pepper and lemon juice. Cut the rolls in half and top each bottom with lettuce, tomato slices, 2 shrimp and some tomato relish. Replace the bread top and secure with wooden picks.
