2 Monkfish (each 700 grams, without heads)
200 grams Bacon

2 garlic cloves (cut in slices)

Preparation steps

Trim monkfish fillets, rinse and pat dry. Cut into equal-sized pieces. Drizzle with lemon juice and season with salt and pepper. Cut the bacon into strips.

Rinse rosemary and shake dry. Strip the needles from 2 branches and chop finely. Thread a piece of monkfish and 1 piece of bacon on each remaining sprig of rosemary and sprinkle with chopped rosemary. Heat 3 tablespoons oil in a pan and fry garlic until golden brown. Remove the garlic and set aside.

Fry the skewers in batches in hot oil on both sides until golden, about 2 minutes. Keep skewers warm while cooking subsequent batches. Serve the skewers sprinkled with garlic slices and garnished with lemon wedges.
