Preparation steps

Preheat the oven to 80 ° C, upper and lower heat.

Rinse asparagus and peel bottom thirds, trim woody ends and halve stalks lengthwise.

Season monkfish with salt, pepper and lemon juice.

Heat 1 tablespoon of butter and 1 teaspoon of olive oil in a pan and saute asparagus for about 3-4 minutes, season with salt and pepper and keep warm in preheated oven at 80°C (approximately 175°F).

Dust monkfish lightly with flour. Heat butter and olive oil in another pan and cook fish for about 2-3 minutes per side or until golden brown. Keep warm in the oven.

Serparate radicchio into leaves and spread with blueberries on plates, top with asparagus and monkfish. Sprinkle with coarsely crushed pink pepper and serve.
