50 grams breadcrumbs
100 grams soft butter
4 eggs
40 grams freshly grated Parmesan

Preparation steps

In a pot boil milk with salt and stir in polenta. Bring to a boil then simmer over low heat until a stiff mash forms, 15-20 minutes. Preheat oven to 200°C (approximately 400°F). Line each muffin cup on a baking sheet with two paper muffin liners.

In a bowl mix together flour, baking powder and breadcrumbs. Beat butter until creamy then gradually stir in eggs individually. Fold polenta into flour mixture and stir, then fold in Parmesan. Pour batter into prepared muffin cups and bake in preheated oven until lightly browned, 20-25 minutes.

Remove muffins and let cool on a grill. Garnish with Parmesan and serve warm or cold.
