1 ¼ cups fresh or frozen Cranberry
¼ cup caster sugar
2 cups milk
½ cup Polenta
1 Tbsp butter

Preparation steps

1.
Put the cranberries in the microwave with the sugar and 2 Tbsp water. Cover with clear wrap, pierce a couple of times. Cook on High for 2 minutes or until the cranberries are softened.
2.
Put the milk into a pan and heat until almost boiling.
3.
Add the polenta and stir continuously on the heat until thickened and smooth.
4.
Stir in the butter, take of the heat and gently stir in the softened cranberries.
