- 220 grams frozen Whole wheat puff pastry dough
- 180 grams button Mushroom
- 1 onion
- 100 grams Mozzarella
- 60 grams freshly grated Parmesan
- Pastry flour (for the work surface)
- 2 Tbsps scallions
- salt
- freshly ground peppers
- olive oil
- 4 tsps balsamic vinegar
Preparation steps

Defrost the puff pastry.

Preheat the oven to 200°C (approximately 400°F).

Clean the mushrooms with a damp cloth and thinly slice. Peel the onion, halve and cut into thin strips. Drain the mozzarella, shred on a box grater and mix with the Parmesan.

Place the dough on a floured surface and thinly roll out. Cut into four 12 cm (approximately 5-inch) squares.

Mix together the mushrooms, onions and chives, spread on the dough leaving a 1/2-inch border all around, season with salt and pepper. Drizzle with olive oil and balsamic, sprinkle with the cheese and bake until crisp and golden brown, 20-25 minutes. Remove and serve immediately.
