Preparation steps
1.
For salad: Rinse bell pepper, cut in half, remove seeds and ribs and cut into thin strips. Rinse and pat dry tomatoes, cut into wedges.

Rinse and dry scallions, cut in half lengthwise and cut crosswise into thin strips.
3.
Rinse and spin dry lettuce, cut out hard stems.
4.
Peel eggs and cut into wedges.
5.
For vinaigrette: Combine all ingredients for vinaigrette and season with salt and pepper.
6.
Arrange lettuce on one large plate or four small plates and top decoratively with tomatoes, pepper, scallions, eggs and olives stuffed with anchovies. Drizzle with vinaigrette and serve.
