Preparation steps

1.

Toast the hazelnuts in a dry frying pan until the skins begin to fall off. Wrap up in a kitchen towel and rub off the skins. 

2.

Whip the egg whites and sugar until stiff and glossy. Carefully fold in the ground nuts, cinnamon and cloves.

3.

Preheat the oven to 150°C (approximately 300°F). Transfer the nut mixture to a piping bag fitted with a plain tip and pipe into cherry-sized dots on a baking sheet lined with parchment paper.

4.

Place 1 hazelnut in the center of each cookie and bake for 15-18 minutes.
