3 Tbsps fine Oats
1 tsp Baking powder
1 pinch salt
2 ½ Tbsps soft butter
2 eggs
7 ozs Almond milk (or 2% regular milk)
2 Peaches
4 ozs Blueberries
½ Vanilla bean
2 Tbsps Maple syrup
1 Tbsp lemon juice
oz mint (about half a bunch)
1 Tbsp liquid Coconut oil

Preparation steps

1.

Mix flour, oat flakes, baking powder and 1 pinch of salt in a bowl. Beat the butter and eggs in another bowl until foamy. Add the flour mixture and milk alternately and mix everything to a smooth dough.

Wash peaches, dab dry, halve, remove seeds, cut peaches into fine slices. Wash blueberries and dab dry.

Halve the vanilla pod lengthwise and scrape out the pulp. Mix maple syrup, lemon juice and vanilla pulp. Wash mint, shake dry and pluck leaves. Mix peach slices and blueberries with the vanilla dressing, fold in mint leaves.

4.

Spread some coconut oil on a waffle iron, add 1 ladle of dough and bake for about 3 minutes. Proceed in this way with the entire dough; keep baked waffles warm in the oven if necessary. Cover the waffles with the peach topping and serve.
