125 grams softened butter
2 eggs
100 grams fine sugar
1 organic lemon (2 teaspoons zest)
2 tsps lemon juice
1 pinch salt
200 grams Pastry flour
Parchment paper (for the baking sheet)

Preparation steps

Beat the butter until smooth. Separate the eggs. Beat the egg yolks, sugar, lemon zest, lemon juice and butter until fluffy. Beat the egg whites with the salt until very stiff. Fold the oats into the butter mixture. Fold in the egg whites and flour. Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper. Use teaspoons to form heaps of the dough and place on the baking sheet.

Bake for about 15 minutes, until golden brown. Remove from the oven, let cool and serve.
