The advantage of oat flakes is that they consist of the whole grain and thus provide a good portion of dietary fibre to aid digestion. Among other things, the swelling agent betaglucan, which can have a positive effect on the cholesterol levels in the blood and promotes the excretion of harmful substances. Ground almonds enrich the biscuits with bone-strengthening calcium and nerve-protecting magnesium.
Because of the soy flour, the biscuits do wonderfully without egg. To conjure up a vegan variant, all you have to do is replace butter, honey and milk with margarine, agave syrup and a vegetable drink of your choice.

- 200 grams softened Margarine
- 275 grams brown sugar
- 175 grams coarse Oats
- 1 packet Vanilla sugar
- 1 pinch salt
- 1 Tbsp honey
- 1 medium egg
- 3 Tbsps Pastry flour
Preparation steps
Melt the margarine and stir in the sugar. Mix the oats and vanilla sugar. Pour the margarine mixture into the oats and mix well. Let soak overnight.
Add the salt, honey, beaten egg and flour. Mix well. Use a teaspoon to portion heaps of dough. Place the dough on a lined baking sheet. Bake for 5-6 minutes at 220°C (approximately 425°F). Remove from the oven, let cool and serve.
