Preparation steps

Drain the olives and coarsely chop. Rinse the thyme, shake dry, and pluck leaves. Roll the puff pastry to a 40 x 20 cm (approximately 15 3/4 x 7 3/4 inch) square. Sprinkle the olives, thyme and cheese over top in an even layer. Roll the short sides inward into pinwheel shapes, with the 2 pinwheels meeting halfway. Whisk the egg with the cream in a bowl. Brush over the puff pastry. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 200°C (approximately 390°F).

Unwrap the puff pastry roll and cut into 1 cm (approximately 1/4 inch) thick slices. Place on a parchment-lined baking sheet and brush with the egg mixture. Bake until golden brown, about 20 minutes.

Remove from oven and cool the puff pastry rolls on a wire rack.
