30 grams fresh, black Truffle
salt

2 Tbsps butter

Preparation steps

1.

Clean truffles thoroughly and cut into thin slices. Whisk eggs in a large bowl and add truffles. Let rest, covered, for about 30 minutes at room temperature.  

2.

Add 2 tablespoons of water and whisk eggs and truffle mixture lightly, season with salt and pepper. Heat butter in a nonstick skillet. 

3.

Pour egg mixture into the pan and let thicken on medium heat.

4.

When omelet is still slightly wet inside, fold about third of the edge inwards. Place omelet onto a preheated plate and garnish with parsley. Serve.
