One Pan Cod and Tomatoes
Healthy, because
Even smarter
Due to the low-calorie and almost fat-free cod, this quick fish pan is an ideal choice if you are looking for light and simple. Cod is also great for building muscle because it contains a lot of protein.
The quick fish pan can be varied according to your own taste. Instead of cod, you can also use other types of fish such as halibut or salmon. You can also vary the amount of vegetables as you like.
Preparation steps
Rinse fish fillets, pat dry, and cut them into bite-sized pieces. Peel onion and cut into 1/4-inch thick slices. Wash tomatoes and cut into rough cubes.
Heat the oil in a frying pan and add the onions. Sauté over medium heat for about 5 minutes. Add fish fillets, diced tomatoes and olives. Add salt, pepper and herbs. Braise over low heat for about 10 minutes.
In the meantime, wash parsley, pluck leaves and chop coarsely.
Serve garnished with parsley.
