Ingredients

For the pastry
150 grams Pastry flour
150 grams Quark
150 grams softened butter
1 pinch salt
For the topping
500 grams onions
400 grams Tomatoes
200 grams cooked, shelled mussels (fresh or from a jar)
2 Tbsps butter
salt
freshly ground peppers
1 tsp dried marjoram
3 eggs
150 grams Crème fraiche
150 grams Whipped cream
75 grams freshly grated Gruyere

Preparation steps

1.

For the pastry: combine flour with quark, butter and salt and knead into smooth pastry with dough attachment of an electric hand mixer. Cover and refrigerate for 30 minutes.

For the topping: peel onions and cut into rings. Blanch tomatoes in hot water for a few seconds, rinse in cold water and peel, quarter and remove seeds, chop.

Heat butter in a pan and saute onions until translucent. Add tomatoes and saute for another 3-4 minutes. Add mussels and season with salt, pepper and marjoram. Remove from the heat. 

4.

Whisk eggs with crème fraîche, cream and grated Gruyère.

5.

Roll out pastry on a lightly floured surface and line greased tart pan with it, making an edge all around. Spread with onion mixture and pour egg mixture over. Bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes. Remove from the oven and serve.
