Ingredients

For the dough
1 cube Yeast
400 grams Pastry flour
salt
4 Tbsps olive oil
For the topping
1 ½ onions
4 garlic cloves
2 Tbsps olive oil
20 Anchovy fillet (in oil)
15 Olives (green or black)
2 Tbsps Caper
100 grams grated Mountain cheese (such as Gryuere)
In addition

Pastry flour (for work surface)

Preparation steps

For the dough: crumble yeast and mix with about 125 ml (approximately 1/2 cup) of lukewarm water. Combine flour with a hefty pinch of salt, add yeast mixture and olive oil and knead into a smooth, pliable dough. Cover and let rest for about 1 hour in a warm place.

For the topping: peel onions, garlic and cut into strips. Heat oil in a saucepan and saute garlic and onions for about 5 minutes or until translucent.

Oil baking dish.

Knead dough again and roll out on a floured working surface. Line baking dish with dough, making an edge all around.

Spread onion mixture on the dough and top with anchovies, olives and capers, to taste. Sprinkle with cheese and bake in preheated oven at 200°C (approximately 400°F) for about 35-40 minutes or unitl golden brown. Remove from oven and serve.
