Preparation steps

Peel oranges with a sharp knife carefully, taking care to remove the pith, then cut crosswise into slices. Reserve escaping juice and squeeze the orange residue. Peel the ginger and squeeze through garlic press to juice. Assemble the orange slices again, placing bits of ginger between the discs. Peel carrot and cut or slice into very thin strips. From lemongrass, peel outer leaves, cut off ends and peel some inner leaves.

To serve compose oranges with juice on plates and garnish with inner lemongrass leaves and carrots.
