- 3 Oranges
- 4 Halibut steak (each about 180 grams)
- salt

- olive oil
- 1 Tbsp cold butter
- 1 handful Basil
- 2 handfuls Arugula
- 3 Tbsps balsamic vinegar
Preparation steps

Squeeze two oranges, peel, halve and thinly slice the third orange thoroughly. Rinse the fish and pat dry. Season with salt and pepper. Saute fish until brown on each side for 2-3 minutes in 1 tablespoon of hot oil in a pan. Remove and place in aluminum foil if desired. Deglaze the pan drippings with the orange juice. Stir in the butter and do not allow it to boil. Season with salt and pepper. Pluck the basil leaves, set some aside for garnish and coarsely chop the rest. Add to the sauce and add the orange slices.

Rinse, clean and spin dry the arugula. Place the arugula on plates and drizzle with a little oil and vinegar. Place the fish on the plates and pour the sauce on top.

Serve with the remaining basil leaves as garnish.
