260 grams Pastry flour
2 tsps Baking powder
½ tsp baking soda
2 tsps Orange peel (organic)
3 medium sized Oranges
1 egg
150 grams brown sugar
100 milliliters sunflower oil
250 milliliters Buttermilk

Preparation steps

For the muffin batter, mix the flour thoroughly with baking powder, baking soda and orange zest in a bowl. Peel the oranges with a sharp knife carefully, removing the white skin. Cut the orange pulp fillets from the separating skins, cut into halves and chop. Squeeze out the juice from the orange residue.

In a separate large bowl, break the egg and whisk lightly. Add in the sugar, oil, buttermilk and orange pieces with juice and mix well. Add the the flour mixture and fold in gently. Fill the batter into the greased cups and place on a baking tray.

Bake in a preheated oven at 180°C (fan: 160°C, gas mark 3) (approximately 350°F) until golden, about 20-25 minutes.

Let the muffins in the cups rest for about 5 minutes and remove from the cup. Wrap the muffins with sandwichwrap paper and tie with rafia or string. Serve warm or cold. (Tasting hot best!)
