140 grams Pastry flour
250 milliliters
2 Tbsps sunflower oil
4 Tbsps raisins (60 g)
1 Tbsp powdered sugar (10 g)

Preparation steps

1.

For the compote, peel pears and cut into narrow strips. Cut vanilla pod lengthwise and scrape out beans.

Heat apple juice with spices and vanilla in a saucepan. Add pear pieces and simmer for 3-4 minutes on low heat. Remove from heat and cool.

For the pancakes, separate the eggs. Beat egg whites with 1 pinch of salt until stiff. Stir egg yolks with sugar until fluffy. Add flour and pour milk in slowly while stirring. Fold in egg whites.

Heat 1 teaspoon of oil in a pan. Pour in 1/4 of the batter, sprinkle with 1 tablespoon raisins, cover and cook on low heat 3-5 minutes. Tear into pieces, sprinkle with powdered sugar and caramelize. Repeat for rest of batter.

Keep warm in oven at 80 ° C (approximately 175 ° F).

6.

Sprinkle with remaining powdered sugar and serve with pears.
