Preparation steps

1.

Cook the tagliatelle in boiling salted water until al dente. Cut the bacon into strips. Peel and finely chop the onion. Rinse and trim the chili, and thinly slice.

2.

Rinse and dry the endive, then cut into thin strips. Sauté the onions in the oil, then add the bacon. Add the chilis and season to taste with salt and pepper. Add the endive, and sauté briefly.

3.

Drain the pasta, and toss in the pan with the bacon mixture. Divide onto plates, and garnish with the parmesan cheese.
