6 ozs Bacon (thinly sliced)

2 ripe Avocados
½ lemon (juice of)

½ bunch Arugula

Preparation steps

1.

Separate the leaves of the endive. Rinse, pat dry, and reserve 8 large leaves. Remove the core from the rest of the endive and cut into thin strips.

Cut the bacon into strips, and fry in a pan with 1 tablespoon of oil. Remove and drain on paper towels.

3.

Halve the avocados and remove the seeds. Separate the fruit from the peel and cut into bite-sized pieces. Mix immediately with 1 tablespoon of lemon juice.

4.

Mix the remaining lemon juice with 4 tablespoons of oil and season with salt and pepper. Mix the avocado, bacon, sliced endive, and the vinaigrette. Season to taste and then divide onto the whole endive leaves. Arrange on plates, and garnish with the arugula.
