- 400 grams Tagliatelle
- salt
- For the pesto
- 1 bunch Basil (leaves)
- 3 Tbsps Pine nuts (dry roasted)
- 2 garlic cloves (peeled)
- 1 tsp Sea salt (to taste)
- 30 grams Parmesan
- 20 grams young pecorino romano
- 70 milliliters good quality olive oil
- freshly ground peppers
- Basil (for serving)
Preparation steps
1.
Cook the pasta according to the package directions in boiling salted water.
2.
Puree the basil, pine nuts, garlic, and half of the oil with an immersion blender. Gradually mix in the salt, cheese, and more (as needed). Season to taste with pepper.
3.
Drain the pasta and divide onto plates. Top with the pesto and garnish with basil.
