Preparation steps

Preheat oven to 215°F.

Peel, rinse, and cut potatoes and parsnips lengthwise with a vegetable peeler into thin strips.

Pat dry and place on a baking sheet lined with baking paper. Dry in oven for 3-4 hours. Turn vegetable strips occasionally.
