- 2 handfuls parsley
- 1 garlic clove
- 1 generous pinch lemon zest (organic)
- 2 Tbsps almonds (peeled)
- 2 Tbsps grated Parmesan
- 6 Tbsps olive oil
- salt
- freshly ground peppers
- 500 grams Spaghetti
- 2 Chicken breasts (each about 140 grams)
- 150 grams Cherry tomatoes
Preparation steps
Rinse parsley, shake dry, pluck off leaves, set some leaves aside for garnsihing and chop the rest finely. Puree together with peeled garlic, lemon zest, almonds, Parmesan, 2-3 tablespoons of water and 4-5 tablespoons of oil for a pesto. Season with salt and pepper.
Cook pasta in boiling salted water until al dente.
Rinse chicken breasts, pat dry and season with salt and pepper. Heat remaining oil in a grilling pan and grill chicken for about 8 minutes on both sides. Rinse and dry tomatoes. Halve and add to the chicken pan, cut side down, during the last 3-4 minutes of grilling. Season with salt and pepper.
Drain pasta and mix with pesto. Arrange on plates. Slice chicken and arrange together with tomatoes on top of pasta. Sprinkle with parsley and serve.
